fried ripe plaintains (maduros) recipe

Nothing goes better with the fiery heat of Jamaican curry than fried ripe plantains.  And just about nothing is easier to make.

Can’t find plantains by you?  I suggest moving.

Ingredients:

2-3 ripe (fully black or almost black) plantains

Vegetable oil

Directions:

Peel the plantains and cut on a bias into 1.5-2 inch pieces.

Add about an inch of vegetable oil to a non stick skillet over medium high heat.

Once the oil is about 350 degrees (or preheated for about 3 minutes) add the plantains and cook until a nice golden brown color on all sides.  NOTE:  ripe plantains are loaded with sugar and could easily burn -don’t go wandering away.

Drain on paper towels and eat up.
